Poor Man’s Steak with Onion Gravy

Ingredients

1.5 pounds beef chuck steak, about 1-inch thick
2 tablespoons all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 teaspoon paprika
3 tablespoons vegetable oil
1 large yellow onion, thinly sliced
2 cups beef broth
1 tablespoon Worcestershire sauce
1 tablespoon Dijon mustard
2 tablespoons butter
Fresh parsley, chopped (for garnish)

Instructions

1. In a shallow dish, combine the flour, salt, pepper, garlic powder, and paprika. (5 minutes)
2. Dredge the beef steaks in the flour mixture, ensuring they are fully coated on both sides. Shake off any excess flour. (5 minutes)
3. Heat the vegetable oil in a large skillet over medium-high heat. (3 minutes)
4. Sear the steaks for 3-4 minutes per side, until browned. Remove the steaks from the skillet and set aside. (8-12 minutes)
5. Add the sliced onion to the skillet and cook, stirring occasionally, until softened and caramelized, about 10-15 minutes. Reduce heat if needed to prevent burning. (10-15 minutes)
6. Pour in the beef broth, Worcestershire sauce, and Dijon mustard. Bring to a simmer, scraping up any browned bits from the bottom of the skillet. (5 minutes)
7. Return the steaks to the skillet, nestling them into the onion gravy. Reduce heat to low, cover, and simmer for 1-1.5 hours, or until the steaks are tender. (60-90 minutes)
8. Remove the steaks from the skillet and keep warm. (2 minutes)
9. Increase the heat to medium and simmer the gravy for 5-10 minutes, or until it has thickened to your desired consistency. (5-10 minutes)
10. Stir in the butter until melted and incorporated into the gravy. (1 minute)
11. Serve the steaks topped with the onion gravy and garnished with fresh parsley. (1 minute)
