Pecan Pie Bars

 

Ingredients:

For the Crust:

1 cup unsalted butter, softened

2 cups all-purpose flour

1/2 cup granulated sugar

1/4 tsp salt

For the Filling:

3 large eggs

1 cup light corn syrup

1 cup brown sugar

2 tbsp unsalted butter, melted

1 tsp vanilla extract

2 cups chopped pecans

 

Instructions:

Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper. In a medium bowl, mix softened butter, flour, sugar, and salt until crumbly. Press evenly into the bottom of the pan. Bake for 20 minutes or until lightly golden.

In a large bowl, whisk together eggs, corn syrup, brown sugar, melted butter, and vanilla. Stir in pecans.

Pour filling over baked crust and spread evenly. Bake for 30–35 minutes or until filling is set.

Let cool completely before cutting into bars.
