For the Fried Pineapple Rings:
1 fresh pineapple, peeled, cored, and sliced into 1/2-inch rings
1 cup all-purpose flour
1 tablespoon cornstarch
1 tablespoon sugar
1/4 teaspoon ground cinnamon (optional)
1/2 teaspoon baking powder
1 cup sparkling water or club soda
Vegetable oil for frying
For the Creamy Coconut Dipping Sauce:
1/2 cup coconut cream (or full-fat coconut milk)
2 tablespoons powdered sugar
1 teaspoon vanilla extract
A pinch of salt
Optional: toasted shredded coconut for garnish
Instructions:
Prepare the batter by whisking flour, cornstarch, sugar, cinnamon, and baking powder in a bowl. Gradually add sparkling water, stirring until smooth. Set aside.
Heat vegetable oil in a deep pan to 350°F (175°C).
Dip pineapple rings in batter, let excess drip off, then fry 2-3 minutes per side until golden and crispy. Drain on paper towels.
For the sauce, whisk coconut cream, powdered sugar, vanilla, and salt until smooth. Chill for 10 minutes before serving.
Serve pineapple rings warm with dipping sauce. Garnish with toasted coconut if desired.
