Blackberry Lemon Tart

Ingredients:

Crust:

1 ¼ cups all-purpose flour

¼ cup powdered sugar

½ cup cold unsalted butter, cubed 1–2 tbsp cold water

 

Lemon Filling:

½ cup lemon juice (about 2 lemons)

1 tbsp lemon zest

¾ cup sugar

3 large eggs

¼ cup unsalted butter, melted

1 tbsp flour

 

Blackberry Topping:

1 ½ cups fresh blackberries

2 tbsp sugar

1 tbsp water

 

Instructions:

1️⃣ Preheat oven to 350°F (175°C).

2️⃣  Combine crust ingredients in a bowl, cutting butter into flour until crumbly. Add cold water just until dough forms.

3️⃣ Press into tart pan and bake 15 minutes until lightly golden.

4️⃣  Whisk lemon juice, zest, sugar, eggs, butter, and flour until smooth. Pour over crust and bake 20–25 minutes until set.

5️⃣  In a small saucepan, heat blackberries, sugar, and water for 5–7 minutes until jammy.

6️⃣  Let tart cool completely, then spread or swirl blackberry topping over lemon layer.

7️⃣ Chill before slicing and serve cold.
