Ingredients:

 

1 lb dried pinto beans, rinsed and soaked overnight

 

1 lb beef stew meat, cubed

 

1 cup green chiles, chopped

 

1 large onion, diced

 

4 cloves garlic, minced

 

4 cups beef broth

 

1 teaspoon cumin

 

1 teaspoon chili powder

 

1/2 teaspoon smoked paprika

 

Salt and pepper to taste

 

2 tablespoons olive oil

 

Fresh cilantro for garnish

 

Directions:

 

Heat olive oil in a skillet over medium-high heat. Brown the beef stew meat on all sides, then transfer to the slow cooker.

 

Add diced onion and garlic to the skillet and sauté for 2-3 minutes until softened. Transfer to the slow cooker.

 

Add soaked pinto beans, green chiles, beef broth, cumin, chili powder, smoked paprika, salt, and pepper to the slow cooker. Stir to combine.

 

Cover and cook on low for 7-8 hours or on high for 4-5 hours until the beans are tender and the beef is fall-apart soft.

 

Adjust seasoning to taste, garnish with fresh cilantro, and serve warm.
